Champagne lies at the northern edge of French viticulture, around Reims and Épernay. The chalk subsoil drains the vineyards and holds the cellars where the wine ages on its lees; the Champagne hillsides, houses and cellars were inscribed as UNESCO World Heritage in 2015.
Kosher Champagne is a small but established category. Laurent-Perrier makes kosher versions of its Brut and its Rosé, and several other houses produce kosher cuvées together with certifying bodies.
The method adds steps that matter for kashrut. The second fermentation, riddling, disgorgement and dosage all take place after the base wine is made, so the kosher chain has to cover the whole period up to the final cork, which can be several years.
