Oltrepò Pavese, literally "beyond the Po" from Pavia, is Lombardy's largest wine area. It is Italy's main source of Pinot Noir for traditional-method sparkling wine, alongside reds made from Croatina and Barbera.
Bartenura, the kosher brand of the Royal Wine Company, sources its wines from the province of Pavia, and by the early 1990s it had become the best-selling wine in the kosher sector.
Sweet, lightly sparkling Moscato is technically demanding to make kosher. Fermentation is stopped by cold to keep sugar, and a sweet, low-alcohol wine needs tight control of SO₂ and filtration all the way to bottling.
