Târnave follows the valleys of the Târnava Mare and the Târnava Mică in the centre of Transylvania, around Blaj, Mediaș and Târnăveni. Altitude and the humidity of the rivers keep ripening slow and acidity high, and that sets the style: aromatic, fresh whites.
The region is home to Jidvei, the largest producer in the area, and it supplies much of Romania's traditional-method sparkling wine, for which high natural acidity is an asset rather than a problem.
For a technical audit the interesting variables here are malic acid and cold stability. With naturally high malic acid, the decision whether to allow malolactic fermentation shapes the finished wine more than any piece of equipment.
